Recently my husband was diagnosed Type II, shortly after being dead for 3 min, and 38 seconds (not one of my fondest memories). Blood clots, over-weight, type II, smoker ....... and only 46--I'll lose him next time for sure.
We both need to drop weight, and I'm ahead at 30 pounds from sheer real dieting and walking. I need to incorporate more low-carb meals and snacks--like most of us here, I think, we crave the easy, easy carbs.
So, I'm looking forward to seeing recipes, support, ideas, etc., to help keep my ball rolling.

Snaps, He was dead for 3 1/2 minutes? Scary. Talk about being a great motivator to loose...huh? In a way, it is good for him that you both have to loose weight. He has a partner!
I'm very close to his age. I had high blood pressure, acid indigestion, not feeling good with myself. I had a hard time tying my shoes, sleeping and moving. It is all getting much better.
This is my 2nd time on Atkins. First time, I lost 82# and five years later gained 62 back. I am on it again (and exercising) and lost 18 and need to loose another 50 to reach my goal. I am a meat lover, so I love this diet!
I'm an Exec. Chef at a hotel, and I could probably help you when it comes to easy-quick recipes. Because I am supervising cooks and Chefs all day in the kitchen, I do not want to spend more than 20 minutes cooking for myself at night.
You could ask me any questions about any recipe if you wish. But I will offer you a few tips that works for me...
--Shop once a week and buy enough protein for 6 meals. Fresh or frozen, peeled raw shrimp, any fresh or frozen fish fillets, turkey breasts, pork roast or chops, beef, lamp chops, cooked ribs, pre-roasted chickens, hamburger patties, italian and german sausages, cheeses, eggs, butter, no sugar whipped cream, heavy cream..... - --Shop twice a week for fresh produce - bagged salad, avocados, chives, ginger, chiles, fresh herbs - After induction, more types of fresh veggies would be good.
--Designate one cabinet in your kitchen to low carb dry goods so you don't have to look at all that other sugar stuff. --Stock your cabinets with plenty of spices, low salt soy sauce, splenda sweetener, olive oil, canola oil....
With those items in you kitchen, I could tell you how your creation can go from refrig to skillet to plate in twenty minutes. It's easy when you have all of the ingredients in your kitchen. Even if you only had three types of proteins to choose, all we would need to to is treat those proteins with different spices or different sides and you will not get bored.
