Many of the low carb products contain fillers from the gum family such as Gum Arabic, Xanthum Gum and Gellan Gum just to name a few. These act as thickening agents usually. Some individuals are very allergic to these ingredients. If you aren't 100% sure a product will be okay with you (such as when trying out something brand new) try only a little bit of it and wait 24 hours before eating the rest to see if you will react to anything in it.
I say this because it happened to me. I have been eating low carb bars and products for years without any incident and to my knowledge I was not allergic to anything. Then one day out of the blue, I tried a new low carb bar that had just come out on the market. I ate the whole thing for lunch and went about my day as usualy. By 7 PM that nite my lips were bigger than Mic Jagers and I had broken out in hives. By the next morning I had to go to the emergency room because I was having difficulty breathing since my throat and nasal passages had swollen up over nite. I also could barely see out of my eyes since the lids were nearly swollen shut.
The moral of this story is to be cautious when trying anything new. You never know. It could happen to you!
