FROZEN TORTONI- serves 8
4 oz cream cheese 1/2 cup plus 2 tablespoons Splenda or equivalent of other artificial sweetener 1/4 cup sugar-free almond or amaretto flavored syrup, such as DaVinci or Dolce 1/2 teaspoon almond extract 1 1/2 cup heavy whipping cream 3/4 chopped almonds or other nuts or unsweetened coconut 1 tablespoon lemon or orange peel, grated
Whip cream cheese with 1/2 cup of Splenda and the almond extract, until light. Beat in the syrup. In a separate bowl, whip the cream until light. Fold into the cream cheese base. Gently fold in 1/2 cup of nuts or coconut. Pipe or spoon mixture into 8 large foil lmuffin cups. Freeze 2 hours or until frozen. Remove from freezer 5-10 minutes before serving. Mix together orange or lemon peel, remaining chopped nuts, remaining sweetener and sprinkle it on top of the tortoni. Tortoni can be made ahead and frozen for 2-4 weeks.
