Toll-Free Chocolate Chip Cookies
1 cup Splenda 1 egg 1/2 cup butter, softened 1/2 teaspoon baking powder 1/4 teaspoon salt (but only if the butter is unsalted) 1 tablespoon vanilla 1 cup protein powder (I used NRG vanilla, which is a soy/whey blend) 1 tablespoon Brown Sweet'N'Low (not the same as Brown Sugar Twin) 2 tablespoons sugar free maple syrup 1 1-ounce square unsweetened baking chocolate non-stick spray
Cream the butter; add the sweeteners and the egg and combine well. Add all the remaining ingredients except the baking chocolate and mix well.
Shave the chocolate into bits and chunks with a paring knife and stir into the batter.
Spray a cookie sheet with non-stick spray and drop batter by spoonfuls onto cookie sheet.
Bake at 325 degrees for about 15 minutes. Makes 24 cookies.
