Low Carb Peanut Butter Cookies
1 cup peanut butter (the lowest carb one you can find) 1 egg 1 cup Splenda (a sugar substitute) 2 tablespoons whey-based protein powder (I used Designer Whey Vanilla Praline, available at GNC) 2 teaspoons vanilla 1/2 teaspoon baking soda 1 tablespoon Brown Sugar Twin
Preheat over to 350 degrees. Combine all ingredients except the Brown Sugar Twin in a mixing bowl, using a mixer to blend together. Dough will be very stiff. Form dough into balls slightly smaller than the size of a walnut. Place balls on greased cookie sheet. Put the Brown Sugar Twin on a small plate. Flatten the cookies with the bottom of a drinking glass dipped in the Brown Sugar Twin.
Bake at 350 degrees for 9-10 minutes, or until cookies are done.
Yield: 30-36 cookies.
