Beefy Rancho Roll-Ups
1 pound ground beef 1 8-ounce can diced tomatoes, undrained 1 4-ounce can diced green chilies, drained 1 can Eden Soy Black Beans, drained (optional) seasonings to taste: crushed red pepper, cumin, salt and pepper low carb tortillas or Low Carb Crepes shredded cheddar or Mexican blend cheese (optional - to taste) sour cream (optional - to taste)
Brown the ground beef; drain. Add salt and pepper. Add in drained chilies, drained beans and undrained diced tomatoes. Season to taste and cook until the liquid evaporates.
Place beef mixture in a low-carb tortilla or a low carb crepes and garnish with cheese and sour cream.
Serves 8 @ 213 calories, 17.25 grams fat, 12.75 grams protein, and 4 grams carbohydrates w/ 1.75 grams fiber. (Nutritional analysis does not include spices, tortillas or crepes, or optional sour cream and cheese.)
Variation: If you wish to eliminate the carbs from the tortillas/crepes, place the beef mixture in a casserole, to with shredded cheese and bake at 350 degrees until heated through. Garnish with dollops of sour cream.
