Lemon Garlic Pepper Wings
2 1/2 pound chicken wings, trimmed and separated 1/2 cup lemon juice 5 to 6 large garlic cloves, chopped 1 tablespoon black peppercorns, crushed 2 teaspoons salt 1/2 cup olive oil
Place the wings in a large glass or enamel bowl and pour over the lemon juice, garlic, and crushed peppercorns. Sprinkle on the salt, and then pour the olive oover the wings and stir. Marinate for 2 hours at room temperature, stirring occasionally to coat the wings with the marinade. Drain and reserve the marinade.
Preheat the broiler. Place the wings on a broiler pan and broil 10 minutes. Turn the wings over and baste then with the reserved marinade. Broil an additional 10 minutes, until wings are nicely brown and cooked through.
Transfer to a platter and serve.
***Note: The marinade ingredients in this recipe are not mixed together first, but are poured over the wings separately. Add the ingredients in the order given, before mixing, or the lemony flavor will be lost.
