6 eggs (and yes, I've used egg beaters on occasion) 2 C heavy cream 1/2 C bacon bits 1 1/2 C grated Swiss Cheese 1/4 C parmesan cheese 1 pkg frozen chopped spinach, micro for 3 mins and drain 1/2 C sausage (I usually add more) seasonings (salt, pepper, onion salt, parsely) to taste
Mix all together and pour into a baking dish (original recipe called for a pie tin but I found a 9 x 12 rectangular pan worked better). Cook for 1 hr at 350.
