Route 66 Diner Philly Chicken
1/2 cup celery, chopped 1/2 cup onion, chopped 1/4 medium green pepper, chopped 3 Tablespoons vegetable oil 1/2 - 1 teaspoon lemon pepper to taste 2 cloves garlic, minced 1 pint heavy cream (I used less for thicker consistency) 1 (8 oz) package cream cheese, softened 1 chicken, cooked, skinned, and deboned (approximately 3 cups) (I used chicken breasts) 1/4 cup parmesan cheese
(If using chicken breasts, pan fry with a little lemon pepper in some vegetable oil until cooked through. Chicken breasts are best when the raw meat is pounded a bit between plastic wrap.)
In large saucepan, sauté the celery, onion and pepper in vegetable oil. Add lemon pepper, and garlic. Cook until vegetables are tender. Mix in separate bowl, cream and cream cheese until uniform consistency and add to celery mixture. Heat to simmer, but do not boil. Pour over chicken. Sprinkle with parmesan cheese. Makes 6-8 servings.

I have to ask...with all this cream cheese, heavy cream, and parmesan cheese...this is gonna be alright to eat? And still loose weight? If I was to substitute the Vegie oil with Olive Oil would that be alright? (I think the Olive Oil would make me feel less guilty) I am so at a lost here...I'll learn though...surely. (This just sounds too good!) Me! ;D

I could hardly believe it either, at first. I didn't really believe it could possibly work - until the pounds started falling off! But, reading the Atkins book, it does in fact make sound sense. But years of putting cream and butter on the "sin list" is hard to forget in an instant. I always scramble or fry my eggs in butter and have cream on my jelly (and add flaked almonds so it looks like a trifle!). Nuts are another thing that were firmly on my sin list for years - but now I eat nuts most days and don't worry. This is a whole "world upside down" experience for a lot of people and I am sure that getting your head round the foods that are no longer off limits is half the battle - that and getting used to weird food combinations! I have a friend who has battled with a low fat plan for over 10 years. Every time I see her she makes me talk her through what you can have on Atkins, because she just can't get it to make sense with the rules she has lived by for so long. The poor woman eats little more than a couple of crackers and steamed veg. If you can get used to "new rules" - it is a truly liberating experience. I must admit - I get a buzz out of turning down an apple in favour of a slice of full fat cheese to the amazement of anyone around!

Me, You can have olive oil......... and the creamed cheese & Heavy cream carbs must be counted......

Now see, I really am going to have to get the Atkins book or something because I am just lost! How many carbs are recommended in a day for someone my size....270+ and about 5' 5 1/2"? (gotta get that 1/2" in there!) I just don't know where to begin! Like today...I started out with 2 boiled eggs and then ended up eating leftover spaghetti and later some purple hull peas and cornbread, and a bit of fried squash! that were left over from the nite before. It's really gonna be hard on me folks as I am from the South and we do love that breaded and fried stuff...it's my whole way of cooking all of my life!!! I'm home alone most of the time so I only have me to cook for me, as my husband is a long haul truckdriver. My mom lives next door and I sometimes cook for her, but because she has recently been diagnosed with Diabetes, I'm having to watch what I cook for her as well. I know this can be a great help for all of us...it's just getting started and remolding my way of thinking, I suppose. GEEZ, THIS IS GONNA BE TOUGH!

Honey, you're gonna be just fine . I would send you the Atkins book, but it would take about 10 days to reach you from here and I hope you will be able to get your paws on one before that. It really will all make sense and you can ask as many questions as you like here. The other girls know so much - I tend to be a bit slap dash! If you cook low carb for your mom I am sure it will do her good and you CAN still fry stuff! Do you bake? If so, you can make bread to use as crumbing so you can still have your southern fried! There is a recipe on here somewhere for crumbing, with a cheese variation too. I am sure it all looks really daunting from here right now. But I know you want to do it! Just starting to learn what you need to do is such a big first step on the road to sucess! Once you get stuck into that book, things will start to make real sense, so don't worry. The boiled eggs were a good start to the day, and I know squash is low carb and fried is fine. The spaghetti is the bad guy! I used to have my head in the fridge all the time as I am home alone in the day too - well - all the time actually. But once the low carb way kicks in you will not be hungry and it will take away that constant need to be looking for things to eat. As you know, I am not a prayerful person. But I know you find strength in your faith. Maybe God gave me the nudge to bring you here, because He knows it's the right time for his child to win what is rightfully hers - control of her weight and a happier way to live.

Thank you so much for your encouragement and all this information, SugarBane!!! I am so thankful to "Ava" for introducing me to this site....as I told her, she may have just saved my life, but I do know that the rest is up to me. I will get the Atkin's book to see just what I'm not understanding. I hope your move goes well, "Sugar" as I completely understand what you're going thru due to my move in October of last year from Illinois to Arkansas. I was born and raised in Arkansas and moved to Illinois in 1990 then returned after 13 years of living up there...it was quite an ordeal!!! I hope you like it in Nashville, I have a sister-in-law that lives in Antioch and really loves the Nashville area.

Well ladies!!! I still haven't got my book, but I did try the Route 66 Diner Chicken Philly receipe yesterday and I gotta tell you....IT'S RICH! But it was really good ...even my husband liked it and though he's a big man....he was very picky about every lb that went on him. I will be looking forward to trying even more new receipes now! I thought I was going to have to eat nothing but MEAT AND GREEN BEANS!

Have you thought about starting a Journal on this board? It`s great to write down all your thoughts and feelings.... and everyone posts their 2 cents worth in your journal........... helps with motivation, encouragement and ideas....... on ALL aspects of your life.. doesn`t have to be just about your Low carbing. it might help
