1 package mushrooms 1/2 small onion, chopped fine 1/4 cup almonds, very finely chopped (meal?) 2 TBS butter 1 oz cheddar cheese, grated
Remove the stems from the mushrooms and chop finely, setting aside the caps for later. Saute the onion, mushroom stems and almond meal in the butter until softened. Add the cheese and stir until melted - the cheese will hold it all together. Spoon the mixture into the mushroom caps and bake at 400 degrees for approx 10 minutes or until done.
