Low Carb Doughnuts
1 cup soy protein isolate (NOT soy flour) 1/4 tsp salt 1/2 cup AS equivalent 2 eggs 1 tsp vanilla or coconut flavoring 1/4 cup cream 1/4 to 3/4 cup water (enough to make a shapable dough)
Sift dry ingredients together. Add flavoring, egg, cream, and water. Form into balls the size of doughnut holes (if I use icing, I flattened them slightly). Fry in hot oil (I use a Fry Daddy) until browned. (You might have to break one open to see if it's done.)
I shake the round ones in a mixture of Splenda and cinnamon.
For icing:
2 oz cream cheese 1 tsp cream AS to taste (about 1/4 cup equiv.) Flavoring of choice
Beat together and frost those doughnuts!

"AS" stands for Artificial Sweetener. It took me a bit to figure it out too SugarBane
