Low Carb Crepes
1 scoop protein powder (2 tablespoons) 1 egg 1 tablespoon heavy cream 1 packet artificial sweetener 2 tablespoons water (Enough to make a thin batter.) butter
Combine all the ingredients. Let the batter sit a few minutes to thicken.
Heat up a small nonstick frying pan. Swirl some butter in it. Pour some batter into the pan. Swirl the pan around to coat the entire bottom with a thin layer of batter. (You can use the back of a spoon or ladle to spread it further, if need be.)
Cook until the top surface is no longer wet. Flip over the crepe and cook for about 15 seconds on the other side. Remove the finished crepe from the pan, and make the rest.
This is a good basic make-ahead recipe to keep in the freezer.
You can make them unsweetened to use for tortillas, bake in the shape of a taco or taco salad-bowl, use for enchiladas or wraps, cut into strips and fry up for faux Chinese noodles, etc.
For the entire recipe: 103 calories, 8 grams fat, 6 grams protein, and 1 gram carbohydrate w/ trace of fiber.
