Chocolate Almond Cheesecake Muffins
8 ounces softened cream cheese 1 egg 1 1/2 tablespoons almond extract (yes, tablespoons) 1/2 package SF chocolate pudding mix (I like the chocolate fudge best)
Mix together with a mixer until creamy & well blended. Fill 6 paper-lined muffin cups and bake at 350 for 20 minutes. The almond flavor is very strong, but good. I also like it made with vanilla extract.
