Queso Fundido With Zucchini & Mushrooms
2 cups shredded Monterey jack or mozzarella cheese 1 cup crumbled feta or anejo cheese 1 tablespoon butter 1 teaspoon minced garlic 1 medium zucchini, trimmed and diced 10 mushroom caps, thinly sliced freshly ground black pepper (to taste) warm low carb tortillas or crepes for serving
Preheat the oven to 375 degrees.
Combine the cheeses and place in 4 1/2-cup ovenproof ramekins or a 9-inch square casserole. Place on a baking sheet and bake 5 minutes. Remove from oven.
Meanwhile, melt the butter in a small skillet over medium-high heat. Saute the garlic, zucchini, and mushrooms until lightly browned. Season with black pepper. Scatter the vegetables over the cheese, and return to the oven.
Bake about 7 minutes, or until the cheese is completely melted and bubbly. Serve hot with warm low carb tortillas or crepes.
