ASPARAGUS PARMESAN.
Melt a generous amount of butter in a large frying pan. Add a package of frozen asparagus spears. Saute them in the butter, stirring occasionally, until they are done and are the texture you like. Sprinkle with garlic powder and grated parmesan cheese.
BROCCOLI WITH QUICK CHEESE SAUCE.
Steam fresh broccoli or make frozen broccoli however you normally do it (saucepan or microwave). While it's cooking, melt a third of a stick of Velveeta (I like the hot Mexican flavor). This makes just the right amount of sauce for two portions.
FAKE GREEN BEAN CASSEROLE.
Put two cans of green beans in a casserole. Add one eight-ounce container of sour cream-based dip (I like Kraft dips -- they're lower in carbs than some others; just about any flavor will work -- I like the bacon horseradish or the French onion). Thin with a little heavy whipping cream if necessary. Put in some bacon bits if you like, or sliced mushrooms, or -- if you can have this many carbs -- leftover sauteed onions. Bake in a 350-degree oven for about half an hour.
