MAKES 12 (about 1 carb ea)
250g philadelphia cream cheese 3.5 1 small red onion 3 80g baby spinach leaves 2 60g hot salami finely chopped 2.2 salt and pepper 0 2 eggs lightly beaten .4 I use 6 cherry tomatoes cut in hal .8 Grated cheese 0
METHOD: 1. Grease pans, heat oven to 180c 2. Combine softened philly, onion, spinach, salt and pepper. Mix well. Stir in beaten egg and spoon into pans 3. Top muffin with tomato and sprinkle with cheese. Bake at 180 for 15min or until set and golden. Good hot and cold.
You could use instead of onion spinach salami – bacon pieces mozzarella cheese and mushrooms. You could use 2 tblsp soy flour in the mixture but I find it holds ok without and you save on the carb count.
